Not by chance, “Il Mulino della Signora” is my world, and I share it with many other worlds, without leaving the roots of my land.

This is what happens in our kitchen every day.
This is what I asked our chef Antonio Guacci, the first day he entered our kitchen: our goal is to enhance the peculiarities of the products grown in our farm, to discover new sensory contaminations, to prepare dishes that also can whet your sight, without upsetting its nature and essence.
I think that the result of all this things is under the… palates of plenty of people. Being able to always make new a taste experience, daring but in a moderate way, is something that helps to transform a set of ingredients into a unique sensory journey.
What is surprising of Antonio Guacci’s job is the extraordinary balance of his dishes, that fill the stomach and fill the memory.
This is also the philosophy that inspired me to live this adventure, this return to the origins, with that passion that is typical of dreamers, of people who looking for emotions in little things: in a flower, in a fragrant soup, in a “thank you” from heart.
